If you think that a salad is dull, then you need to mix it up a little: try new dressings, add nuts, noodles or baked vegetables. This recipe is a warm one, perfect for the winter days and it's also quite filling.

Ingredients

  • white mushrooms (champignons)
  • pleurotus mushrooms 
  • red pepper
  • a carrot or two smaller 
  • olive oil 
  • green spinach 
  • rocket
  • almonds 
  • cherry tomatoes 
  • brown rice noodles 
  • lemon
  • salt 
  • pepper

Directions for Warm salad with noodles, green spinach and baked vegetables

Step 1: Wash and wipe dry the vegetables. Then turn on the stove and set the heating on medium heat and put a small pot with water and salt to boil. In the meantime place a baking sheet on a griddle. The pleurotus mushrooms should be baked whole. The champignons were cut into four. Cut the paprika and the carrot into sticks and the tomatoes in two. Put all of them in a griddle, sprinkle olive oil and place them in the oven, at small temperature, for 10-15 minutes.

Step 2: When the water starts boiling, put the noodles to boil for 6-8 minutes. Then turn off the heat, remove them from water and if specified on the package and rinse them. Take the vegetables out of the oven. Put the fresh spinach in a deep bowl, add the noodles and the warm vegetables, olive oil, salt, pepper and very little lemon juice. You can either add rocket into the salad and mix it with the rest of the ingredients or add it to each place when serving. Top every portion with small tomatoes and sprinkle chopped almonds. Enjoy!
