Another hit of the Lalla Cooking Seminar from April 2009 was the warm potatoes salad with red onion and mushrooms. It's aromatic, filling and has a creamy touch of blue cheese.


  • 500 grams potatoes, cut into half
  • 2 tbsp olive oil
  • 2 red onions, cut into 6
  • 4 slices smoked ham
  • 140 grams sliced mushrooms
  • tsp mustard with seeds
  • tbsp red wine vinegar
  • 100 grams spinach leaves
  • 85 grams creamy blue cheese

Directions for Warm potato salad

Step 1: Heat the oven at 220 degrees. Place the potatoes in a tray and mix them with a spoon of oil and a little bit of salt. Cook them for 20 minutes, then add the onion and mix it well. Leave it in the oven for 20 more minutes, until the potatoes get a golden crust and the onion caramelizes. Take them out and let them cool off.

Step 2: Heat up a pan and sweat the ham cut into strips until it becomes crunchy, add the mushrooms and keep them on the stove for 5 minutes, until they soften. In the meantime make the dressing by mixing the mustard with a bit of water, vinegar and the spoon of oil. Put the potatoes, onion, ham, mushrooms and spinach in a bowl, pour over the sauce and mix it well. Divide the salad into 4 plates and sprinkle cheese on top of them. Enjoy!
