Cabbage rolls are a popular dish in Romania and they can be with meat or vegetarian. They have a specific, slightly sour taste and go well with the traditional "mamaliga".


  • a cup of rice
  • can of champignon mushrooms
  • 2 onions
  • one big carrot
  • pickled cabbage leaves
  • one can of tomatoes
  • a few tbs of oil
  • salt and pepper
  • dry thyme
  • fresh dill
  • fresh parsley

Directions for Vegetarian cabbage rolls

Step 1: First of all, you must prepare the leaves by putting them in hot water for 15 minute. Wash the rice in cold water, finely chop the onion and the carrot, dice the mushrooms, then fry them in a pan with a little of oil. Add salt, pepper, thyme, a can of water, tomato juice and let it simmer until most of the water evaporates. Turn off the fire and add two spoons of finely cut fresh parsley.

Step 2: Place on each cabbage leaf (or half of it if they are too big) about a spoon of the rice mixture. You will have about 30 pieces of cabbage rolls. Put on the bottom of the pot a layer of cabbage, the cabbage rolls, then more cabbage leaves, laurel and thyme. Pour enough water to cover the rolls and place it in the heated oven for about 40 minutes. The add the diced tomatoes and let it simmer for other 15 minutes. In the end sprinkle finely chopped dill. They are excellent with spicy pickled pimientos.
