A simple vegetarian recipe that has a lot of flavor.


  • eggplant
  • a squash
  • 2 large mushrooms
  • 3 red bells
  • a handful of yellow beans
  • clove garlic
  • 2 tablespoons olive oil
  • salt
  • basil

Directions for Vegetables mix

Step 1: Wash and slice the vegetables. Add salt on the eggplant slices and let the water get out of them, then rinse with cold water.

Step 2: In a jena bowl place in layers the slices of eggplant, mushrooms, beans, yellow squash and tomato. Grate the garlic and put on top. Sprinkle vegetables with olive oil, salt and dried basil. Cover the dish with aluminum foil and bake until vegetables are juicy and become very soft. Enjoy!
