Soft, fluffy and aromatic. But what will surprise you about this recipe is that it is not made with eggs, milk or butter and most of the flour is integral. It is purely vegetal, perfect for the days when you crave for something sweet, but with not so many calories.


  •  a cup of rye flour  
  • 1/3 cup white flour
  • ½ teaspoon baking soda
  • ½ teaspoon salt 
  • ¼ teaspoon baking powder
  • 2 ripe bananas
  • ¾ cup brown sugar
  • 3 tablespoons oil
  • teaspoon and a half vanilla extract
  • ¼ teaspoon nutmeg
  • teaspoon and a half of cinnamon


  • ¼ cup brown sugar
  • 2 tablespoons water
  • 2 tablespoons walnuts
  • 2 teaspoons coconut flakes

Directions for Vegan banana cake

Step 1: Preheat oven at 350 degrees Fahrenheit or 175 degrees Celsius. Put baking paper in a pan. Mix bananas with a fork, then add sugar, oil, spices and mix well until you have a homogeneous paste. 

Step 2: Mix baking powder with baking soda, salt and flour. Then mix it with the banana paste. Pour resulting batter in the pan, over baking paper.

Step 3: Place it in oven (medium heat) for 25-30 minutes, or until it passes the toothpick test. Remove from oven and let it cool off.

Step 4: Mix in a bowl brown sugar with water, walnuts and coconut flakes. Put it to boil and when it simmers, keep it one minute longer on medium heat, mixing continuously. 

Step 5: Remove cake from pan and cover with caramelized sugar and nuts. When it cools off, cut and serve. Enjoy!
