  • 800 grams sweet cheese
  • 100 grams brown sugar
  • pack of vanilla sugar
  • 3 eggs
  • 200 ml liquid cream
  • peeling from one lemon
  • 2 tablespoons lemon juice
  • teaspoon vanilla extract
  • 200 grams golden raisins

Directions for Sweet cheese and raisins pie

Step 1: Wash raisins and place them in hot water. Keep them there until added to the filling. Prepare filling: mix eggs with brown and vanilla sugar till they increase volume. Add in the cottage cheese, then cream, lemon peel, lemon juice and vanilla extract. Place the bowl in the fridge until the batter is ready.

Step 2: Mix soft margarine with water, oil, vinegar and salt, then add flour and mix the batter till it doesn’t stick to the hands. Divide it into equal parts. Sprinkle flour on the working table, then spread a thin layer of batter, making sure you add enough flour to it and on the presser. Place the sheet of batter in a tray. Take the cheese filling from the fridge and mix it with well-drained raisins. Pour it in the tray.

Step 3: Then spread a second sheet of batter on the working table and when it’s ready place it above the cheese mix. Pierce the batter from place to place with a fork and place the tray in the hot oven, then bake the pie on medium heat until it gets a nice crust and the cheese is curdy. Let it cool off in the tray, then cut it and sprinkle sugar over it. Enjoy!
