Each region has its secrets and manner of cooking. This time we’ll go to the North of the country, where a grandmother from Piatra Neamt shares her special recipe of sweet cake with nuts filling.


Batter for two cakes:

  • kg flour
  • 50 grams yeast
  • 4 eggs
  • 300 grams
  • sugar
  • ½ l milk
  • tsp salt
  • 100 grams butter
  • 100 ml oil
  • a cup sour cream
  • rum essence
  • peel from one lemon
  • 2 packs vanilla
  • sugar


  • 500 grams grounded nuts
  • tbsp cocoa
  • 200 grams sugar

Directions for Sweet cake a la Piatra Neamt

Step 1: Make the cake yeast out of yeast, a teaspoon of sugar and warm milk. Sprinkle some flour and let it grow, keeping it in a warm place.

Step 2: Sift the flour in a deep bowl and add the cake yeast. Mix the yolks with sugar and add them also in the bowl, along with the lemon peel and the essence. Mix the whites into a thick foam and add a third of it in the bowl. Add also the milk, little by little and incorporate it into the batter. Mix it all well, for about 15 minutes, then add butter, oil and sour cream. Mix about half an hour. The batter is ready when it comes off with ease from the hands and bowl.

Step 3: Cover the batter and let it increase its volume (at least 30 minutes) by keeping it in a warm place. In the meanwhile, mix the grounded nuts with cocoa, rum essence and sugar. You can also add the remaining mixed whites.

Step 4: When the batter is ready, divide it into equal parts. Stretch each piece and add the filling, roll it and put it in an anointed rectangular griddle. Let it increase its volume for 30 more minutes before putting it in the oven. Cover the tops of the cakes in a thin layer of mixed yolk, sprinkle sugar, then put it in the oven for about 50 minutes.

Take them out, let them cool, then remove them from the griddles and enjoy!
