Squashes filled with chicken and rice

Recipes - Squashes filled with chicken and rice

This recipe is easier to make than it may seem and can be served with sour cream. The meat can be replaced with mushrooms for the ones who are fasting or want something vegetarian.

  • boneless chicken breast
  • 2-4 thin big squashes
  • onion carrot
  • 3 tbsp rice
  • egg
  • fresh dill and parsley
  • kg ripe tomatoes
  • salt and pepper

Directions for Squashes filled with chicken and rice

Step 1: Wash the squashes, cut them into half and remove their core. Then cut the meat, onion, carrot and squash in the kitchen robot, altogether. Add the washed rice, the chopped greens, egg, salt, pepper and mix it well. Fill the squashes and if they are small and you have extra filling, you can fill some paprika as well.

Step 2: Then place them in a pot that could be placed in the oven. Slice a tomato to make covers for the squashes and finelly chop the rest of them in the robot. Add the tomatoes over the squashes, a glass of water, salt, pepper and 2-3 spoons of oil. Cover them with aluminum foil and cook them in the oven for 45 minutes. Enjoy!
