An easy and refreshing recipe, perfect for the warm summer days.

Ingredients

  • 2 tbsp oil
  • 2 tbsp honey
  • 2 tsp harissa
  • 2 small eggplants, sliced
  • sliced paprika
  • few tbsp. cus-cus
  • zest and juice from one lemon
  • handful of chopped mint
  • Greek yogurt

Directions for Spicy vegetables with couscous salad and yogurt sauce with mint

Step 1: Mix the oil with honey and harissa and sprinkle half of this paste over the eggplants and paprika. Add salt and pepper and cook them on the grill on both sides, until well done.

Step 2: Put the cus-cus in a bowl and pour hot water over it, until covering the whole quantity. Let it 10 minutes to soak and increase its volume. Add the sauce, the zest and juice of one lemon and the mint leaves.

Step 3: Serve the vegetables on cus-cus, sprinkled with yogurt mixed with chopped mint. Enjoy!
