Spiced Beef

Eaten hot or cold, Spiced Beef is traditionally served on Christmas Day or Boxing Day, decorated with hooly.


  •  4 lb. rolled salted silverside
  • 1 onion, sliced
  • 1 small turnip, sliced
  • 3 carrots, sliced
  • 1 bayleaf
  • water, stout or brown ale
  • 12 cloves
  • 2 oz. soft brown sugar
  • juice of 1 lemon
  • 1/2 teaspoon each ground cinnamon allspice and nutmeg
  • 1 level teaspoon mustard powder

Directions for Spiced Beef

     Soak the meat in cold water overnight. Next day, rinse well and tie up with kitchen string to from a firm, neat joint. Put the onion, turnip and carrots in a large saucepan, place the meat on top, add the bayleaf then cover with cold water or a mixture of water and stout or brown ale. bring to the boil, skim, then cover and simmer gently for 3 1/2 to 4 hours. Leave to cool completely in the liquid. Set oven to 350 degrees F or Mark 4. Drain the meat very well, place in a roasting tin and stick with the cloves. Mix together all the remaining ingredients and spread over the meat. Bake for 40 minutes, basting from time to time. Remove the string and serve hot or cold.
