Vegetarian recipes can be much more interesting than most people think. A few ingredients like coconut milk or lime juice can completely transform a simple dish.

Ingredients

  • 3 crushed garlic cloves
  • ½ finely chopped onion
  • chili sauce
  • curry
  • coconut milk
  • soy noodles
  • lime
  • chopped parsley
For the salad:
  • cucumber
  • carrot
  • sugar
  • lime juice
  • soy sauce
  • oil

Directions for Soy noodles curry

Chop onion, put it in hot oil in a pan, add salt and fry it until it turns transparent. Add garlic and mix for a minute, then chilli sauce and the curry mix. Add coconut milk. Then increase the heat on the stove and when the sauce simmers, add soy noodles. Cook them for about 15 minutes, until they absorb enough moisture and become tender. Add lime juice, chopped parsley and soy sauce. Then cut vegetables into thin slices. Mix them in a bowl, add a bit of sugar, lime juice, soy sauce and oil. Enjoy!
