A sophisticated salmon recipe, ideal for a dinner with friends, New Years' Eve or when you simply want something special.


  • 4 slices of salmon,
  • one orange cut into pieces,
  • zest from one orange,
  • zest from one lemon,
  • a few drops of olive oil,
  • salt

For the sauce:

  • 25 grams of butter,
  • 3-4 tablespoons of flour,
  • 250 ml bubbly whine Rhein Extra Brut Imperial,
  • juice from one orange,
  • one orange,
  • salt,
  • white pepper

Directions for Salmon with Rhein wine sauce and oranges

Step 1: Add salt and a bit of oil on the slices of fish. Sprinkle orange and lemon zest on top. The place them in the oven in a tray with slices of orange and a bit of water. From time to time sprinkle sauce from the tray over the fish and add more water when necessary. When they’re ready, place them on a platter.

Step 2: Then prepare the sauce: melt butter in a tray, add flour by sifting it and mix continuously until you get a homegenuous sauce. Add Rhein Extra Brut Imperial little by little. Add orange cut into pieces and orange zest as well and mix well. Add salt and white pepper. Serve with the warm fish. Enjoy!
