Very tasty and easy to make, this salmon medallion recipe will impress any gourmand.


  • one salmon medallion,
  • a spoon of bread crumbs,
  • a spoon of chopped parsley,
  • a spoon of olive oil,
  • ½  teaspoon of lemon peel,
  • salt,
  • pepper,
  • Italian herbs,
  • a garlic clove,
  • 2 spoons white wine.

Yellow beans salad:

  • a handful of yellow beans,
  • a spoon of of finely chopped dill,
  • one finely chopped garlic clove,
  • salt,
  • pepper,
  • a teaspoon of olive oil,
  • a teaspoon of lemon zest

Directions for Salmon medallion in herbs crust

Step 1: Put the bread crumbs, the chopped parsley, lemon peel, salt, pepper, Italian herbs, chopped garlic clove and olive oil in a bowl. Mix well.

Step 2: Wash the salmon medallion, then sprinkle salt, pepper and some olive oil over it. Coat it in a generous layer of herbs. Anoint a ceramic pot with olive oil and place the salmon in it. Pour two spoons of white wine over it. Cover the bowl with cooking aluminum foil. Place it in the oven that’s been pre heated to 175 degrees for 20 minutes. After 20 minutes remove foil and let it bake for 10  more minutes.

Step 3: While the fish is in the oven, prepare the salad. Boil the beans, the cut them into smaller pieces and add salt and pepper to them. Also add dill, garlic and lemon zest. Sprinkle olive oil. Serve with the fish. Enjoy!
