This aromatic chicken roulade can be served both warm or cold and it's an excellent starter.


  • 500 grams deboned chicken breast,
  • 150 grams spinach,
  • onion,
  • 2 garlic cloves,
  • 50 grams feta or hard cheese,
  • one egg,
  • nutmeg,
  • soy sauce,
  • teaspoon balsamic vinegar,
  • teaspoon olive oil with basil,
  • 60 ml olive oil,
  • 50 ml white wine,
  • salt,
  • pepper,
  • a bit of water

Directions for Roulade with marinated chicken, cheese and spinach

Step 1: Cut the chicken breast into two. Place some kitchen foil over the meat and use the meat hammer to flatten it in order to get two uniform slices. Prepare a mixture of soy sauce, balsamic vinegar and basil oil. Cover the meat in the sauce, then place the slices into kitchen foil and put them in the fridge for an hour.

Step 2: In the meantime make the filling. If you use fresh spinach, then blanch it in hot water, then put it in cold water. After it cools off, remove it from the water. The finely chop it. If it’s frozen, just unfreeze it and get rid of the extra water.

Step 3: Heat 30 ml of olive oil in a pan. Peel onion and then cut it into 4. Peel garlic as well. Fry both of them in the hot oil. Remove them from the pan when they get softer and then add spinach. Keep it on medium heat until the liquid is evaporated. Let it cool down, then add cheese, oil, salt, pepper and nutmeg. Remove meat from the fridge and place the spinach filling over the slices. Roll the chicken meat and tie its ends or pin them with toothpicks. Place them in a thermoresistant pot in which you added the rest of the oil and a bit of water. Place the pot in the oven for 30-40 minutes. During the middle of the cooking  roll them on the other side, then add  wine. Keep them in the oven until they  get a nice crust.

Step 4: Serve warm with vegetables and sauce, or cold, finely sliced. Enjoy!
