Recipes - Ratatouille

If you saw the animated film Ratatouille, then you definitely remember the recipe that impressed the culinary critic. Rustic and simple, ratatouille is nevertheless a recipe full of flavour and it will surely gain you over.


  • squash
  • 2 tomatoes
  • green paprika
  • red paprika
  • small onion
  • garlic clove
  • cup of tomato juice
  • 2 tbsp olive oil
  • salt
  • pepper
  • rosemary
  • basil
  • thyme
  • dry green onion

Directions for Ratatouille

Step 1: Peel, clean and finely chop the onion and garlic, then mix it with the tomato juice, a spoon of olive oil, salt, pepper and a teaspoon of dry spices. Pour the mix in an oval pot.

Step 2: Wash and slice the eggplant, squash, tomatoes and the paprika. Place them in the pot in the shape of an accordion, alternating the slices, so that you have one of each next to the other. Sprinkle olive oil, add salt, pepper, dry and fresh greens.

Step 3: Cover the pot with a cap or aluminum foil and place it in the heated oven, at medium temperature, for about 45 minutes. Check not to overcook them. Then carefully remove them from the pot and enjoy!
