Tortilla wraps are quite easy to do and they are so much tastier than the bought one when they are warm, freshly made. You can fill them up with meat or veggies. I chose to make "sandwiches" that I cut into triangles and served with spicy sauce. Enjoy!


  • 2 cups flour
  • one cup water
  • baking powder
  • salt
  • 2 tablespoons olive oil
  • 250 grams hard cheese
  • 100 grams blue cheese
  • red pepper
  • tomato
  • gresh parsley 
  • fresh chives
  • pepper

Directions for Quesadilla with cheese and vegetables

 Step 1: Mix flour with baking powder, a bit of salt, water and oil. Make an elastic dough. Mix it by hand, but don't do it more than 3-5 minutes. Cover it with a kitchen towel and let it sit for 15 minutes.

Step 2: Wash tomato and red pepper. Remove seeds from the red pepper. Then cut them into small cubes. Grate cheese. Cut parsley and chives too. Mix all of them together and add some freshly grinded pepper. You can add some salt too, but in my opinion it's salty enough already from the cheese.

Step 3: Form small balls out of the dough (I did 8). Flatten them with the roller on a table sprikled with flour. Try to make them round and of the size of the pan you are going to bake them in. Mine were quite big. Fry all of them on both sides, in a non-stick pan without using any oil or other  type of greese. When they are ready, assemble them two by two. Put the cheese mixture on one of them, cover with the other, then put the flat "sandwich" back into the heated pan, long enough for the cheese to melt. If you can, gently turn it on the other side as well. You could also heat them in the oven.

Step 4: In the meantime I put a few tablespoons of canned and cut tomatoes in a pot, a finelly sliced garlic clove, one thread of chive, salt, pepper and a bit of sambal sauce. While it boiled, I cut the quesadilla into triangles. Serve warm or cold with the spicy sauce. Enjoy!
