Living in a foreign country can be hard, especially when you start missing some foods from home. I am a huge fan of sour soups, which in Romania are called "ciorbe" and although the Polish have similar foods, it's not quite the same taste. A recipe that I don't remember eating in Romania, but which reminds me of home because it's so refreshing and sour is the Polish dill pickles soup. Very easy and fast to make, it can be served warm or cold and it's just delicious. I would eat and eat.. and eat!


  • 4 potatoes
  • 4-5 dill pickles
  • 1 carrot
  • 1 onion
  • a piece of celery root
  • small parsley root
  • fresh parsley leaves
  • salt
  • pepper
  • sour cream

Directions for Polish dill pickle soup

Step 1: First of all wash and peel carrot, celery root, parsley root and onion, cut them into big chunks and put them to boil in about a litre of water with a bit of salt (don't put too much salt because you'll later add dill pickles and some of  their juice and they are pretty salty). I also added a few celery leaves. In the meantime, peel and cut potatoes into small cubes. When water starts boiling, add the potatoes over celery, onion, carrot and parsley root.

Step 2: Cut pickles into small cubes. When potatoes are almost done (they are boiled but not too soft, it's better not to keep them too much over heat because they will continue to boil for a bit after you remove the spot from the flame), remove the rest of the vegetables from the soup (keep just potatoes). Cut carrots into smaller pieces and add them back to the pot. Of course, you can also cut it into small cubes from the begining, but I find it more convenient to cut everything in bigger chunks and the recut only what I keep in the soup. The add the pickles and dill pickle juice, let it simmer one more time, then remove pot from the heat. Serve soup warm or cold with a bit of sour cream and fresh parsley. Enjoy!
