Who would say no to a Greek inspired recipe? Mixing spinach with cheese is certainty one of the most delicious combinations.


  • 1 kg fresh spinach

  • 3 bunch onions

  • 2 tablespoons of oil

  • fresh cheese

  • 2 eggs

  • 2 tablespoons of milk

  • parmezan

  • salt

Directions for Pie with spinach and cheese

Wash the spinach. Put a pot with water to boil and blanch the spinach for a few minutes. Cut the bunch onions and fry it in a pan. Then add the spinach and mix. Add the cheese, one whole egg and the white from the second egg (keep the yolk for anointing the pie). Mix till all the ingredients are well blended. Add salt and parmesan to the end. Then defrost two layers of pastry. On the first one put the cheese and spinach mixture. Cut the second into thin strips and arrange them on top of the filling. Mix the remaining egg yolk with a bit of milk and pour it over the pie. Sprinkle more parmesan over it and place it in the oven, at medium heat, for 35-40 minutes. You know it’s ready when it gets a nice crust. When it cools down, slice it and place it on a platter. Enjoy!
