Peppers filled with vegetables or meat is a summer recipe that can be served both warm or cold.


  • 6 green or red peppers

  • 12 teaspoons of rice

  • one big onion

  • one carrot

  • handful of parsley

  • 2 tablespoons olive oil

  • salt and pepper

Directions for Peppers filled with vegetables

First prepare the filling: put oil in a non-stick pan. When it sizzles, add finely chopped onion. Sprinkle salt. Then add grated carrot. After 2-3 minutes add a cup of warm water and let it boil for 10 minutes after the moment it starts simmering. Add greenery at the end (parsley or dill). in the meantime, till the filling cools down prepare the peppers. Wash and remove their cores gently, without breaking them. Fill each pepper with rice, place them in the pot, add chopped onion, oil, cover with water and let them boil for about 30 minutes. Add tomato juice, salt and pepper. Keep them boiling until the foam made by the tomatoes goes away. Serve warm or cold with sour cream and finely chopped dill. Enjoy!
