Recipes - Pears with vanilla and chocolate cream

A refined desert, ideal to win over your guests or served at a romantic dinner for two.

  • 2 hard pears
  • 800 ml water
  • 100 ml white wine
  • 150 grams sugar
  • vanilla sugar

Vanilla cream:

  • 250 ml milk
  • egg yolk
  • 3 tbsp sugar
  • tbsp flour
  • vanilla essence

  • milk chocolate
  • 3 tbsp water

Directions for Pears with vanilla and chocolate cream

Step 1: Wash the pears and peel them carefully, leaving their tailets. Cut a little the base of the pear so you can fix it better on a plate later. In a tall pot put the water, wine, sugar and boil it until they melt. Then carefully put the pears inside and let them boil at small temperature for 30 minutes.

Step 2: In the meantime make the vanilla cream. Mic the milk and egg yolk and put it on the fire. Keep mixing and make sure the cream doesn’t stick to the pan. You can boil it at bain-marie or use a pot that has duble bottom. When the milk starts to boil add the flour and sugar, little by little, continuously mixing. It will thicken quite fast, so turn off the fire and let it cool off.

Step 3: After the pears have boiled, take them out carefully and let them cool down. On two plates equally distribute the vanilla cream and place the pears on them. Then make the glaze: melt the milk chocolate with 3 spoons of water until it becomes liquid and homogenous. Glaze the pears with the hot chocolate. Be careful to melt the chocolate other in bain-marie or in a pot with double bottom. Enjoy!
