  • 250 g flour
  • 350 ml milk
  • sachet of yeast
  • spoonful of sugar
  • 50 g butter
  • 2 eggs


  • 3 lemons
  • 30 ml limoncello liqueur
  • sachet of gelatine
  • 2 yolks
  • 100 g powdered sugar
  • 250 g mascarpone
  • 100 ml whipped cream

Directions for Pancake tower

Step 1: Mix yeast with sugar and a little warm milk and stir until melted. In a bowl sprinkle flour, make a dimple in the middle and pour the remaining warm milk and yeast. Mix with a spoon and let it rest in a warm place for 15 minutes, covered with a towel. When small bubbles begin to form, add the melted cooled butter and beaten eggs. Mix with electric mixer at the lowest speed, cover the bowl with a towel and leave in warm place for 30 minutes.

Step 2: Meanwhile prepare the cream. Hydrate gelatin in a few tablespoons of cold water. Sink lemons in boiling water for 30 seconds, remove peel them and squeeze the juice. Heat the lemon juice with the limoncello liqueur in a small pot. When it reaches the boiling point, turn off the fire and add the gelatin. Mix yolks with powdered sugar until they become white and swell. Pour warm lemon syrup over them and then homogenize everything. Allow it to cool completely, then mix with mascarpone cream. Add lemon peel and let it cool for at least half an hour, till the dough for pancakes increases its volume.

Step 3: In a pan greased with oil bake tiny pancakes; then leave them to cool down. Mix lemon cream with whipped cream. Put a pancake on a plate, add a tablespoon of cream and a pancake and so on, until it forms a tower. Sprinkle powdered sugar, garnish with thin strips of lemon peel and mint. Enjoy!
