Omelet is one of the most popular recipes in Romania and it's served either for breakfast or as a late afternoon light meal. You can have it simple or mixed with milk, creme fraiche and vegetables. In this recipe, the corn flour that falls to the bottom creates a thin layer of polenta which makes it more consistent and tasty.


  •  6 eggs
  • 100 ml milk
  • 60 grams corn flour
  • mushrooms fried with onion and parsley
  • 100 grams mozzarella
  • green onion
  • parsley
  • pickled red pepper
  • hard cheese
  • salt
  • pepper

Directions for Omelet with corn flour, cheese and vegetables

In a bowl mix eggs with milk and corn flour. Then add the fried mushrooms with onion and a bit of parsley put at the end when they're just ready. Mix, add mozzarella cut into pieces, chopped pickled red pepper, salt and pepper to taste and some finelly chopped green onion and extra parsley if you like it. Coat an oven resistant round pot with butter (20 cm diameter) and pour in the mixture. Grate cheese over it. Place it in the pre-heated oven at 180 degrees for 10-15 minutes, until it gets a nice crust. We served it warm with tomato, spinach and avocado salad. Enjoy!
