"My blueberry nights" pie

If you watched "My blueberry nights" film, you probably wondered what was it about that pie that made Nora Jones crazy about it. I searched the recipe and the closest I could get was this: http://www.slashfood.com/2008/04/01/agave-sweetened-pie-from-my-blueberry-nights/ There are just the ingredients, but I think I managed to figure out how to combine them to make this divine vegan pie. It is indeed very delicious!

Ingredients

  • 3 cups grain spelt four
  • 1/3 cup oil
  • 3/4 cup sugar
  • 2 tablespoons vanilla extract (I used just 2 teaspoons vanilla extract - the extract is quite concentrated)
  • 2/3 cups rice milk (or almond/soy milk)
  • 2 cups and 1/2 blueberries
  • 1/2 cup agave nectar
  • 1/4 arrowroot (I replaced it with corn flour)

Directions for "My blueberry nights" pie

Step 1: Place the flour in a larger bowl. Add sugar over it and mix. In a smaller bowl mix oil, milk and vanilla extract. Then add the liquid ingredients over the flour and mix, at first with a spoon and then by hand until you get a firm and elastic dough.

Step 3: Wash the blueberries and then place then in a bowl. Add the agave syrup and the corn flour over them and gently mix.

Step 4: Divide the dough into two. Strech one piece of it on the working table that has been sprinkled with flour. Place it in the cake pan (use a baking paper if you use a metal pan - I used a silicone one). Make sure you press the dough on the walls of the pan as well, around 1 and 1/2 or 2 centimeters high. Then add the blueberries with all the agave sauce over the dough. 

Step 5: Spread the other piece of dough on the table sprinkled with flour and then cut it into strips. You will use them for making the crust of the pie, drawing squares or rhombs. Place it in the preheated oven at 175 degrees. Bake it for the first 30 minutes with the heat coming from both the upper and the lower part of the oven (if you use an electric one) and in the end you can keep it baking just on the upper part for a nice, golden crust.

Remove from oven, let it cool off a few minutes, then remove from pan. You can sprinkle powdered sugar over it or serve it with ice-cream. Enjoy!
