Mushroom Sauce

This was a popular 19th century sauce and traditional accompaniment to roast goose when served at Christmaas or Michaelmas. Mushroom Sauce is also good served with roast pork


  •  1 1/2 oz. butter
  • 1 small onion, finely chopped
  • 4 oz. mushrooms, finely chopped
  • 1 oz. flour
  • 1/4 teaspoon dry mustard
  • 3/4 pt. rich brown stock or chicken stock
  • salt and pepper
  • 1 tablespoon port or white wine
  • juice of half a large lemon

Directions for Mushroom Sauce

      Melt the butter in a saucepan, add the onion and cook until soft and just golden. Stir in the mushrooms. Mix the flour and mustard together, add to the vegetables and cook for 1 minute, stirring. graduall add the stock, stirring all the time. Bring to the boil and simmer for 5 minutes. Season, add the port or white wine and the lemon juice, then heat through thoroughly. Pour into a warmed sauceboat and serve with the roast goose.
