This recipe is like a breath of fresh air: it looks like a spring-summer landscape and it's Ia very light meal, perfect for a festive dinner. It resembles the beof salad, but it has less calories. It suits very well at the table on Easter and not only, but most important, it's delicious and easy to do! Thank you Natalia!


  • 1 jar of whole pickled mushrooms
  • 3 potatoes
  • 3 carrots
  • 2 eggs
  • 100g cheese
  • Chicken breast
  • handful of dill
  • handful of parsley
  • 3 fresh young onions
  • mayonnaise

Directions for Mushroom meadow

Step 1 : Boil the potatoes, carrots and eggs. After they cool down, grate them separately in different bowls. Boil the chicken breast as well, cut it into small bites and mix it with the grated boiled egg. Grate also the cheese in a different bowl, cut the greens and the onion finely and mix them. In a big pot put a layer of wet cellophane for the ingredients not to stick to its walls. Its recommended to spice each part of the salad individually. 

Step 2: First of all put the mushrooms into the pot, heads down, covering all the bottom of the pan. Add the greens and onion, then the potatoes, pressing them with the hand. Add two spoons of mayonnaise, then the carrots, the cheese and mayonnaise again. The remaining ingredients are the meat and the eggs which are mixed with mayonnaise and become the last layer.

Cover it with cellophane and leave it to the fridge for about 2 hours before serving. When it's ready, just roll it over on a big place. Enjoy!
