A sweet moment of the Lalla Cooking- April 2009 – a delightful desert of chocolate mousse.


  • 100 grams dark chocolate
  • 100 grams white chocolate
  • 4 eggs
  • powdered sugar

Small baskets from crackers

  • 4 eggs
  • 100 grams flour
  • few tbsp powdered sugar

English sauce

  • Egg yolk
  • 100 ml liquid sour cream
  • vanilla and rum essence


  • Melted chocolate
  • dehydrated cherries
  • mint leaves

Directions for Mousse with white and dark chocolate


Step 1: Melt the two chocolates into separate bowls. Add two yolks at a time in each chocolate. Add the whites mixed into a foam, two for each chocolate, mix it carefully, then put it in the fridge.

Step 2: Make small baskets from the crackers by mixing all the ingredients from the list. You can use small shapes in which you put cooking sheets first. Cook them lightly, then remove them from the shapes.

Step 3: In the meantime prepare the English sauce by mixing at bain-marie the yolk with the liquid sour cream. When it thickens, remove it from the fire, add the essences and leave it in the fridge.

Step 4: Pour some English sauce on a platter, add a big cup of mousse of white chocolate and in the crackers’ basket add the dark chocolate mousse. Decorate with melted chocolate, cherries and fresh mint leaves. Enjoy!
