The sweet cake is a traditional Romanian dessert served mostly during Easter and Christmas time. There are more ways of doing it, according to the region they come from. This one is from the Northern part of the country - Moldavia.



  • one kilo white flour
  • 10 eggs
  • 220 grams butter
  • 320 ml milk
  • 50 grams fresh yeast
  • 300 grams sugar
  • vanilla and rum essence
  • 5 grams of sugar
  • lemon peel
  • orange peel
  • 40 grams oil


  • 200 grams nuts
  • 200 grams sugar
  • 100 grams cocoa
  • rum essence 
  • cinnamon
  • milk

Directions for Moldavian sweet cake

Prepare the ingredients: take out the eggs and flour at least 6 hours before cooking, as they need to be warm.

Step 1: Mix the grounded nuts with the sugar and cocoa, the essence and the cinammon, then pour hot milk over them. You put as much milk as you wish, according to how thick or thin you want the cream to be.

Mix 60 grams of flour with milk until it becomes a soft paste. Separately, mix the yeast with a little milk, a teaspoon of sugar and a teaspoon of flour. Cover it with a towel and keep it warm. After the yeast increases its volume, mix it with the warm flour paste and let it increase some more. Cover it again.

Step 2: In the meanwhile, mix the yolks with half of the quantity of sugar and salt until they turn into a cream. When the mixture increased its volume, add the four, the yolk cream, melted butter (warm, not hot), the essences, the lemon and orange peel, the rest of warm milk in which you have melted the rest of the sugar. Make a better out of these ingredients, mixing them for about an hour, then let it increase its volume at least two hours.

Step 3: When you make the batter, constantly pour oil on the hands and mix until it makes bubbles. The batter shouldn’t be hard, but rather soft. If it’s too thick, add 3-4 mixed whites and continue mixing. Cover it with a towel and let it increase.

When the batter has increased, divide it into pieces that you stretch on the table and tell fill it with the nut mixture. Roll it, put it in the long griddle, smear a bit of yolk mixed with milk and place it in the oven, at small fire.
