This lemon cake is for those who like sweets that aren’t too sweet though, but has enough sugar to make it taste like a good desert.



  • 4 eggs
  • 4 tablespoons sugar
  • 4 tablespoons flour
  • 4 small packs of instant coffee
  • ½ pack cooking powder


  • 3 eggs
  • 10 tablespoons sugar
  • 200 grams butter
  • one lemon (zest plus peel)


  • 100 grams milk chocolate
  • 200 grams sweet cream
  • pack vanilla sugar

Directions for Lemon cake

Batter:  Mix whites with sugar till it turns into a hard foam. Add yolks one by one and keep mixing. After you incorporate yolks, remove mixer and add flour, instant coffee and baking powder and blend it with a spoon. Put baking paper on the bottom of a pan with a 24 cm diameter and pour the mixture over it. Put the pan in the hot oven for 30-40 minutes (10 min at strong heat and 20 minutes at medium heat). While batter is in the oven make the cream.
Lemon cream: mix 3 eggs with 6 tablespoons of sugar and lemon zest and keep it over fire until it thickens. Make sure that you mix all the time so that it doesn’t stick to the bottom of the pan. When it’s ready, add lemon peel. Let it cool off and mix butter with 4 tablespoons of sugar until butter becomes fluffy. Pour the boiled cream over butter and mix until it gets completely incorporated. After batter cools off, cut it into 3 parts.
Put a bit of warm cream over each slice of batter to soften it. Make the glaze by melting chocolate with sweet cream. After it melts and the cream is incorporated, remove it from fire and let it cool off a bit. Then mix it a little. Mix the remaining cream with vanilla sugar and use it for decoration.
Asemble it by putting cream between the slices of batter and by glazing the last one and covering the whole cake. Decorate it as you please. Enjoy!
