  • 1 kg pork liver,
  • 1kg pork meat,
  • 500 grams bard,
  • 3 big onions,
  • salt,
  • pepper,
  • allspice,
  • pork intestines

Directions for Homemade leberwurst

Step 1: Wash the intestines, clean the fat off them. Cut the liver into small pieces and boil them for 10-15 minutes. In the meantime cut the meat into small pieces, the bard and boil them. When they are ready, take them out and let them cool off. Fry the finelly chopped onion in a bit of oil. Then grind it with the boiled meat around 3 times, in order to get a smooth mixture.

Step 2: For every kilogram of the meat mixture add 20-25 grams of salt, 3-5 grams of pepper, 2-3 grinded allspice cloves. Mix everything together and fill in the intestines. Tie them at the ends and boil them for 30-40 minutes. Remove them from the hot water and place them in a pot of cold water. After they cool down, remove them from water and let them dry. Keep them in a cool place. Enjoy!
