  • a ripe avocado
  • cup pitted green olives
  • one medium onion or 2 small
  • 1 clove of garlic
  • salt to taste
  • thyme or Provence herbs 

Directions for Green olives and avocado pate

Cut the onion and garlic into big pieces. Cut the avocado into two, remove the seed and then take the flesh out with a spoon. Put them in the blender with the green olives, salt and some dry herbs and mix until it turns into a cream. Serve on simple or toasted bread. Enjoy!
