  • cup tomato juice
  • cup vegetable broth

Directions for Gnocchi with potatoes and tomato sauce

Step 1: Wash potatoes well and boil the in the skin. Once ready leave them to cool down slightly, peel them, then add the egg and mix, flour and salt to taste. Make rolls of dough, less than an inch thicker, then cut them with a knife and do some "stripes" with a fork.

Step 2: Place a pot of water to boil, add salt and when it boils so small fire and put ghocchi. When up remove all the surface with a slotted spoon.

Cut the onion very fine and fry it with a bit of oil, then add vegetable soup. When softened add remaining broth, tomato juice and spices. Add hot sauce over ghocchi in and let it simmer a few minutes. Enjoy!
