A very smooth and refreshing cake that is definitely worth trying.


  • 2 eggs
  • 100 g fine sugar
  • vanilla sugar
  • 40 g flour
  • 40 g starch
  • 1 / 2 teaspoon baking powder
  • 2 tablespoons hot water


  • 500 g strawberries
  • 200 g fine sugar
  • 250 g ricotta or soft cheese
  • 150 g yogurt
  • 250 g liquid cream (or whipped cream)
  • 2 bags of granulated gelatin


  • 300 g strawberries tiny
  • a red jelly sachet

Directions for Fruit cake

Step 1: Preheat the oven at a low temperature. Grease a 24 cm cake pan with oil. Separate yolks from whites. Mix the yolks with hot water, then add the vanilla sugar and mix for 5 minutes until they turn white and increase the volume. Mix the starch and flour with baking powder and pour over the cream of yolks, stirring at low speed with the mixer. When the whites are turned into a hard foam, add over the yolks, stirring with a spoon, until well blended. Pour in the cake pan the batter and bake for 20 minutes until it becomes slightly golden. Try it with a toothpick to check when it is ready. Let it cool in the form for 5 minutes, then remove the dough on a grill and let it cool some more.

Step 2: For the cream, mix the strawberries with 150g of the amount of sugar until a smooth puree. Put aside a cup of mashed strawberries and place the rest in a pot and heat it, without boiling! Disolve the gelatin and add it to the mix, then remove the pan from the heat and let it cool, stirring occasionally.

Step 3: Separately, mix the remaining sugar with sweet cream (if you use whipped cream, do not add extra sugar because it is already sweet). Add the ricotta and creamy yogurt and mix until turning it into a homogeneous cream. Gradually add strawberry puree (should be warm, not to be strengthened, so fluid!). Mix well with mixer.

Step 4: Cut the cake into two, place the bottom back in the cake pan with removable walls and put a circle of parchment around the shape. Pour the strawberry cream (it will be quite thin), then add the mashed strawberries and place it in the refrigerator for half an hour. Remove it and place on top of the cream the second layer of cake and let it cool for at least 2 hours. Enjoy!
