Fish soup may not be everyone’s favorite, but this recipe is really something amazing: slightly sour and excellent with the creamy feta cheese. The combination is excellent and it’s really easy to make. Enjoy!

Ingredients

  • trout (300 grams)
  • 3 liters of water
  • an onion or two
  • red paprika
  • green paprika
  • yellow paprika
  • 2-3 tomatoes
  • green onion
  • 150 grams green olives with no seeds
  • 150 grams black olives with no seeds
  • 100 grams feta cheese
  • fresh parsley
  • lemon
  • salt and pepper

Directions for Fish soup - Greek style

Step 1: Cut onion, paprika, tomatoes and green onion and put them in a pot with water. After it simmers, let the vegetables boil for 10 minutes on medium fire.

Step 2: Add olives to boil as well, add salt and pepper and keep the pot on fire for 15-20 more minutes. Clean well the fish and rinse it with cold water. Then slice it into pieces of 2 cm thick.

Step 3: Add fish slices in the soup and boil for 10 more minutes. Add parsley and let it boil for 10 more minutes. Keep a few parsley leaves for decorating the plates, when serving. Stop the fire and remove the pot from oven for 5 minutes.

Final step: Cut feta into cubes. Place them on the bottom of serving plates. Then pour gently soup and add the pieces of fish. When serving add lemon and decorate with parsley. Enjoy!
