A traditional recipe from the Romanian village Vidra – with a few changes here and there. Enjoy!


  •  eggplant
  • olive oil
  • 3 tablespoons tomato juice + tablespoon sunflower oil
  • 200 grams hard cheese
  • salt
  • pepper

Directions for Eggplant rolls with hard cheese

Slice the eggplant along its length and let it rest on a plate to remove some of its water. In the meantime mix oil with tomato juice and use it for covering eggplant slices in it. Fry slices, then pass them through tomato juice, grate hard cheese and then roll them. Before placing them in the oven, pass them through tomato juice again. Place a slice of hard cheese on top of each roll. Keep them in the oven till the hard cheese melts. Serve them warm or cold. Enjoy!
