You can change the filling of this recipe according to the season. Nevertheless, they are delicious, no matter what you chose.


  • 2 big eggplants
  • chicken breast
  • onion
  • green garlic
  • paprika
  • 2 tomatoes
  • fresh dill
  • egg
  • grated cheese
  • salt and pepper
  • sweet paprika
  • thyme
  • basil
  • 200 grams yogurt
  • green garlic
  • chopped dill

Directions for Eggplant filled with chicken

Step 1: Cut the eggplants transversally, remove their core with a spoon, then sprinkle salt over them and set them aside. Chop the core into the kitchen robot or chop them by hand into small cubes. Place them in a bowl with salt on top.

Step 2: Cut the chicken breast into very thin slices and finelly chop the onion, garlic and the paprika.

Step 3: In a big pan put some olive oil, add the onion, garlic, a little water and let them soften for a few minutes. Then add the red paprika, keep it a few more minutes on the stove, then add the chicken breast. Place the eggplant core in a sift and wash it with cold water (all the juice that got out of the core is bitter and must be removed). Then put the core in the pan, add a small cup of water, salt and pepper and let it simmer at small temperature until all the liquid evaporates. Afterwards, turn off the fire, let it cool off for 10 minutes, then add the egg and the dill.

Step 4: Remove the liquid from the hollowed eggplants and wash them very well with hot water. Place them in a tray, fill them with the meat and vegetable mixture, then add tomatoes on top of them. Add a cut of water into the tray and cover it with aluminum foil. Place it in the oven, at medium heat, for 20 minutes.

Step 5: Remove the aluminum foil and grate the cheese over the eggplants. Sprinkle basil and keep them for 5 more minutes in the oven. Make a sauce from the yogurt, finely chopped or crushed garlic and the chopped dill. Serve them warm. Enjoy!
