I'm not the type of person who just nibbles something for breakfast, but usually end up turning it into a full blown meal. That's why omelet plus salad, plus a cheese sandwich and maybe a small dessert too can be a great way for me to start the day :) The egg in potato and cheese nest is about a third of the breakfast that I really enjoyed yesterday. And it was super easy to make as I had some leftover boiled potatoes from the previous evening.


  •  boiled potato
  • 50 grams hard cheese
  • a bit of green onion
  • 2 eggs
  • salt 
  • pepper

Directions for Egg in potato and cheese nest

 Step 1: Grate boiled potato. Then add grated hard cheese, finelly chopped green onion, a bit of salt and pepper and mix with hand till you get a homogeneous thick cream. 

Step 2: Butter the bottom and sides of two ramekin pots or put baking paper in them (they are small pots that can be used in the oven for making individual portions of souffles or creme brulees). I don't have ramekins, but some nice ceramic small pots for yogurt from Greece - they are great for baking! Then divide the potato cream into two and press it in the bowls, making sure you get the mixture on the margins as well to create a border.

Step 3: Preheat oven at 190 degrees. Then place pots inside for 15 minutes. They will get a golden colour. Take them out and then break an egg into each of them. Sprinkle salt and pepper over them and put them back in the oven for 15 minutes. The baking time for the egg depends on your oven as well, so to be on the safe side, check the eggs from time to time. When they're ready, take them out and let them cool down a bit. Remove them from the pots and serve with salad or just tomatoes. Enjoy!
