There is no Romanian Easter meal without the traditional pasca - a delicate cheesecake with raisins and citrus flavor. Choose fresh, organic ingredients and you will have a recipe that will win you over!


For the batter:

  • 250 ml milk at room temperature
  • teaspoon of salt
  • 125 grams soft butter
  • 2 eggs and 2 yolks
  • 760 grams flour
  • 150 g sugar
  • lemon and orange peel
  • rum essence
  • one cube of fresh yeast.

For the filling:

  • 1 kg cottage cheese
  • 400 grams raisins
  • 4 eggs
  • 6 tbs sugar
  • vanilla essence
  • lemon and orange peel

Directions for Easter Cheesecake

Step 1 : Mix the soft butter with sugar until it becomes a smooth cream, add the mixed eggs, milk, essence and the fruit peeling. Mix the white flour with salt. In a small bowl dissolve the yeast in a little warm water with sugar, then add it to the flour. Mix the rest of the ingredients in and make an elastic batter. Keep it covered under a clean towel until it doubles its size.

Step 2 : Put the raisins into a bowl with cold water and let them soak the moisture they need (or in a bowl with water, sugur and rum). The mix all the ingredients for the filling. From the batter will result two cakes baked in griddles with the diameter of 26 centimeters. Either put baking paper into the griddles, or cover them in a thin layer of oil and flour. Afterwards spread the batter in a thin layer inside the griddle, add the filling and cut the extra batter from the sides. The remaining batter can be used for decoration.

Let the “pasca” sit for 30 minutes in the griddle, gild it with egg, sprinkle brown sugar on top and then put it inside the pre-heated oven for 20 minutes. Enjoy!
