A light and aromatic soup that will warm you during the winter days.


  • 1 cup chopped onion 
  • a half a teaspoon of grated ginger (peeled in advance)
  •  half a teaspoon of chopped garlic cloves about 
  • a pound of peeled and diced carrots 
  • 2 tomatoes
  • a piece of celery (about a quarter) 
  • half a leek (about how long a slap) 
  • little soy sauce 
  • a small parsnip root 
  • teaspoon grated lemon peel 
  • 2 teaspoons fresh lemon juice (optional) 
  • greenery for decoration  

Directions for Creamy soup with carrots and ginger

 Step 1: Wash, peel and cut into cubes all the vegetables. Put the oil to heat into a pan. When it starts to simmer add the onion, the garlic and the ginger. Mix it fast for a few seconds, add the rest of the vegetables, mix and add enough water to cover them.

Step 2: Let everything to boil at small temperature, about 200 minutes. Then turn the heating off. Remove the vegetables from the water and let them cool off. Put all of them to mix or remove some that you would prefer not to have in your soup. Add the water in which they boiled little by little until it gets to the desired consistency.

Step 3: Put the soup back on the fire, add soy sauce and pepper. When it simmers, take it off the stove. You can add lemon juice if you want it a little sour. Serve with gratted carrot, pepper and bunch onion. Enjoy!
