A recipe that will impress any guest. It takes a bit of time and maybe practice in opening a coconut, but it's worth it with every bite.

  • red paprika 
  • soy sauce

  • two halves of peach from compote 
  • oil

Directions for Chicken and rice in coconut shells

Step 1: Cut the chicken into strips and mix it with rice oil, soy sauce and pepper. Put it in the fridge. Cut the coconut into two as it can be seen in the pictures. You can try making wholes with a wine cork and remove the milk. The cut it into two with a strong razor knife. Then remove most of the coconut pulp with a spoon.

Step 2: Put the rice to boil. Put the wok on the fire on medium heat and when it gets hot add the marinated chicken and stir fry it. Add the sliced paprika, a teaspoon of chilli sauce, some curry and a bit of water. Let it boil. In the end add the peach cut into strips.

Step 3: Mix the boiled rice with the coconut pulp and place the mixture into the coconut shells, add some coconut milk, the place the chicken on top. Put it in the oven for 10 minutes. Then remove and serve. Enjoy!
