Chestnut and Bacon Stuffing

Chestnut stuffings wewr popular in the 18th century. A large bird such as a turkey is stuffed to prevent the meat from drying out too much during the long cooking time.This recipe will stuff a 10-12 lb. turkey.


  •  1 oz.butter
  • 1 large onion, finely chopped
  • 4 oz. streaky bacon, diced
  • 1 lb. tinned whole chestnut, finelyy chopped
  • 4 tablespoons chopped fresh pparsle
  • 1 dessertspoon chopped fresh thyme
  • pinch of ground mace
  • 8 oz. pork sausage meat
  • 1 egg, beaten
  • salt and pepper

Directions for Chestnut and Bacon Stuffing

     Heat the butter in a frying pan and add the onion and bacon. Cook for 10 minutes, then remove from the heat and mix in a bowl with the remaining ingredients. Leave covered in a cool, but not cold, place until ready to stuff the turkey. The stuffing must be cold, but not icy cold, when it goes into the bird.
