I ate this soup about a week ago and I really liked it, it was the first time I tried celery soup. So when I came home, I just had to make it :)

Ingredients

  • green cellery
  • small celery root
  • small potato
  • small onion
  • onion
  • carrot
  • parsley root
  • small leek 
  • sour cream
  • pumpkin seeds

Directions for Celery cream soup with pumpkin seeds

Step 1: Peel potato, parsley root, carrot and cut them into cubes. Cut the leek as well. Put them to boil in about a litre of water with salt.

Step 2: Peel and cut onion. Wash celery sticks and cut them into small slices. In a pan heat a bit of oil. Put the onion to fry and when it gets transparent, add the celery as well. When it starts getting softer, add water from the soup and cover the pan with a lid. Keep adding water when it finishes. When the celery is boiled, but still a bit crunchy, remove from heat.

Step 3: Check if the vegetables boiled. Remove some of the celery from the pan if you want to have some whole pieces in the soup. Piure the rest with the potato, parsley root, leek and celery root. I didn't add the colour to keep the light green colour. Add as much soup you need to make the soup thin. I put all the remaining liquid from the pot. Add the remaining celery slices to the soup.

Step 4: In a non-stick pan bake the pumpkin seeds with no oil. Sprinkle some salt over them. Serve the soup with sour cream with pumkin seeds. Enjoy!
