For breakfast or as a snack: a very healthy salad, full of vitamins and minerals that goes perfectly well with toasts.

Ingredients

  • a carrot
  • celery root
  • a couple handfuls of cashew
  • little lemon
  • a clove of garlic (garlic)
  • salt
  • green mint (optional)

Directions for Carrot and celery salad with cashew cream

Step 1: put the cashew nuts in a bowl and cover them with fresh water. Let them to soak for a few hours or better, over night.

Step 2: Remove the nuts from the water and using a blender turn them into a cream. Add a bit of salt and lemon.

Step 3: Grate the carrot and celery root. Put as much celery as carrot grate. Press the garlic and mix it with the roots.

Step 4: Add the cashew cream over the vegetables, add more salt if necessary and fresh mint. Enjoy!
