Ingredients

  • 6 eggs
  • 6 tablespoons sugar
  • 5 tablespoons flour
  • 2 tablespoons starch
  • teaspoon baking powder
  • 30 ml oil
  • 30 ml water

Chocolate cream

  • 250 ml whipped cream
  • 200 grams milk chocolate

Sugar syrup

  • 4 tablespoons sugar
  • 100 ml water
  • teaspoon rum essence

Sweetened whipped cream

  • 200 ml sour cream
  • 2 tablespoons sugar
  • vanilla sugar

Step 1: Make the chocolate cream

Bring the whipped cream to a boiling point, then turn off the heat and put the chocolate broken into pieces into it. Mix until it melts completely. Wait until it cools off, then put the pot in a cold place for a few hours (or for an hour in the freezer).

Step 2: Make the dough

Separate whites from yolks. Mix whites with a pinch of salt untill they turn into a white foam. Then gradually add sugar and keep mixing until it blends in and dissolves. Add swifted flour, starch and baking powder, the egg yolks mixed with water and oil. Mix everything together until you get a homogeneous cream.

Pour the dough in a round baking tray for cakes, with the diameter of 20 cm, that has been previously coated in oil and flour. Make sure the dough spreads evenly and then place the tray in the preheated oven, on small heat for 35 minutes (test if it’s ready by using a toothpick). Let it cool off, then cut the batter in 3 slices, horizontally.

Remove the pot with chocolate from the fridge and mix it well until you get a smooth cream.

Step 3: Make the whipped cream

Put all ingredients in a bowl and mix for two minutes at the smallest speed, then increase speed and mix until you get to the right consistency.

Step 4: Make the syrup

Make a caramel out of the sugar, by putting it in a small pot over fire. When it starts melting and it gets a brown colour, pour cold water over it, then let it simmer two times. Add rum essence and let it cool off.

Step 5: put it together

Anoint the first layer of baked dough with the syrup, then add half of the chocolate cream and spread it evenly over it. Place the second layer on top of it, add more syrop, then a layer of whipped cream. Add syrup again, then cover the upper part of the cake with whipped cream. Decorate the cake with whipped cream and chocolate. Enjoy!
