Summer is the time of delicious fresh fruit, so we should take advantage and prepare some home-made comfitures, that are so good with pancakes!


  • 1 kg of bitter cherries pitted
  • 650 g sugar
  • 1 / 2 large lemon
  • 1 sprig fresh mint

Directions for Black cherries comfiture

Step 1: Place the cherries without pits in a saucepan with thick bottom, then cover them with sugar. Put the saucepan in the refrigerator for several hours till they leavet juice. Put the pot to boil at low temperature, but not directly on fire: on a metal sheet that you use for baking vegetables.

Step 2: While they boil remove any foam that forms. When there is no more foam, add some sliced ‚Äč‚Äčlemon and a sprig of fresh mint. Stir gently with a wooden spoon.

Step 3: From time to time check if the comfiture is ready, by putting the syrup on a cold plate. It would be preferable not to cook it too much, because it will become more dense after it cools down.

Step 4: Remove lemon slices and mint sprig and put the comfiture into the jars. Staple the jars and flip them upside down. Cover and leave to cool. Enjoy!
