  • big beef tongue
  • few garlic cloves
  • 3 tbsp tomato paste
  • 200 grams black olives without seeds
  • salt
  • pepper
  • laurel leaves

Directions for Beef tongue with sauce and olives

Step 1: Put water and salt in a pan and place it on the stove to boil. When it simmers, add the tongue and leave it there for about 5 minutes. Cover the pan and turn off the fire. Keep it covered for 5 more minutes, the remove it and peel it. Slice it in strips of about one finger thick and put it to boil again with salt, pepper and laurel leaves.

Step 2: When it’s boiled, move it in a yena pot, add the tomato paste and the water in which it boiled, the olives and place it in the stove for 20 minutes. In the end, add the minced garlic. Enjoy!
