Mid summer and early autumn are the best time of the year in terms of fresh fruit and vegetables. So take advantage of the diversity of tasty local productions and try light and easy recipes. In Romania, people eat red peppers fresh, but also in a lot of recipes that requires them to be bakes first - which makes them very tender and sweet.


  •  6 red peppers baked in the oven at 180 degrees for about an hour
  • onion
  • garlic clove
  • one tomato
  • oil
  • tablespoon white flour
  • fresh parseley

Directions for Baked red peppers with garlic and sour cream

 Step 1: First of all you must bake the red peppers in the oven or on a grill until their skin gets almost burned. Then you put then in a pot and cover with a lid so that they cool off slowly and and "sweat"- meaning that it will be very easy to peel them by hand later. After you peel them, remove the core with the seeds, you place them in a pot and colect the juice that they left - it's tasty and you can use it for cooking. 

Step 2: Chop the onion into small pieces. Put it aside. Then chop the red peppers. Place lace a pan on fire, add some oil and when it heats up you add the onion and when it starts becoming transparent, add a tablespoon of flour and mix. Then add the peppers and their juice, salt and pepper. In the meantime, make an x on the top of a tomato and put it in a bowl with hot water for a minute of two. Then remove it and after it cools down a bit, you can peel it's skin very easy. Then chop the tomato and add it to the red peppers. Let it simmer for a bit, then add crushed garlic, sour cream, finely chopped parseley, more salt and pepper if necessary. Mix for about a minute, then remove it from heat. Cover the pan with a lid and let the ingredients really mix their aromas. Serve with poatatoes and fresh parseley. Enjoy!
